My SanDisk Extreme Pro 2TB advertised at 2000MB/s reaches less that 1000MB/s with Blackmagic Speed test on all ports of my Mac Studio M1 Ultra using the supplied cables.

Yep! Using the supplied cables will only given you that! You need to get a Thunderbolt3 cable to get the better performance. SanDisk does not make note of that in their docs or even on the package that you need a different cable to get the full performance.
