Replaced the two cables, now the screen looks like this, not sure if I damaged something while I was trying to replace the cables.

I had noticed the orange strip connected to the LCD was a bit damaged, would that be the reason? Everything else works fine, but the screen won’t show the apple and the OS Update (10/22/2020) I have fully replaced the LCD and now it shows up like this:

It looks like you have a damaged LCD panel ribbon cable. Sadly there is nothing you can do here other than replace the LCD panel or the full display assembly 11” MacBook Air Display Assembly , Apple P/N 661-02345
